Peanut Butter Pancakes
Golden Crunch was made for pancakes. The Lotus biscuit pieces melt into the batter and caramelise on the pan, so every pancake tastes like it has been dipped in biscoff. Stack them high, add banana, and pour more Golden Crunch over the top.

Whisk flour, sugar, baking powder and salt together in a large bowl.

In a jug, whisk the egg, milk, Golden Crunch and melted butter until mostly smooth. A few peanut butter streaks are fine.

Pour the wet mix into the dry and stir until just combined. Lumps are good. Rest the batter for 5 minutes.

Heat a non-stick pan over medium heat and brush with butter. Pour ¼ cup of batter per pancake.

Cook until bubbles appear on the surface, about 2 minutes, then flip and cook 1 minute more.

Stack, top with banana and honey, and drizzle with warmed Golden Crunch.
