Chicken Satay with Peanut Butter Sauce
Peanut butter is not only for breakfast. This chicken satay is a proper high-protein dinner: half a kilo of chicken breast marinated in yogurt and spices, grilled on skewers, and served with a peanut sauce that takes two minutes to whisk together with Smooth Soul. Nearly 60 g of protein a serving makes it one of the best muscle-building meals you can cook at home, and with gluten-free soy sauce the whole plate is gluten free. Serve with rice for a bulking meal or with salad if you are cutting.

Mix the marinade ingredients, coat the chicken strips and leave for at least 30 minutes, or overnight in the fridge.

Thread the chicken onto skewers. If using wooden skewers, soak them in water for 20 minutes first.

Grill or cook in a hot pan for 5 to 6 minutes per side until charred at the edges and cooked through.

While the chicken cooks, whisk the Smooth Soul, soy sauce, lime juice, honey, chilli and garlic. Add warm water a spoon at a time until the sauce is pourable.

Serve the skewers with the peanut sauce, chopped peanuts and coriander, with rice or a big salad.
