Peanut Butter Oat Energy Balls
Eight ingredients, one bowl, no oven. These energy balls are our answer to the biscuit tin. Crunchy Crush gives them texture, oats give them staying power, and a little dark chocolate keeps everyone happy. They keep in the fridge for a week, if they last that long.
Ingredients
Directions
- 1
Put everything in a large bowl and mix with a spatula until it comes together into a sticky dough.
- 2
If the mix feels dry, add a teaspoon more honey. If too wet, add a spoon of oats.
- 3
Chill the bowl for 20 minutes so the mixture firms up and is easier to roll.
- 4
Scoop tablespoon-sized portions and roll into 12 balls with lightly damp hands.
- 5
Roll each ball in extra coconut if you like, then store in an airtight box in the fridge for up to a week.
