Spicy Peanut Noodle Bowl
This is the fastest proper dinner on the site. While the noodles boil you whisk a peanut sauce from Crunchy Crush, soy sauce, lime, honey and chilli, then toss everything together with shredded chicken and whatever vegetables are in the fridge. It is a high-protein lunch or dinner that costs less than a takeaway and tastes like one. Use rice noodles and gluten-free soy sauce and the whole bowl is gluten free. Leave out the chicken and add a fried egg or paneer for a vegetarian version.

Cook the noodles according to the packet, drain, and rinse under cold water so they do not stick.

Whisk the Crunchy Crush, soy sauce, lime juice, honey, chilli, garlic and ginger in a large bowl. Add hot water a spoon at a time until the sauce is the thickness of cream.

Add the noodles, chicken, carrot, cabbage and spring onion to the bowl and toss until everything is coated.

Divide between two bowls and top with peanuts, coriander and a squeeze of lime. Serve warm or cold.
